Feng Xiao's Guide to Brewing Cha Dao

  

  • Start with filtered or a good spring water (pH over 7 is best). 
  • Boil water and turn off heat. 
  • Place 1 serving (2-4g) of tea into 100-150cc (small!) teapot.
  • For white tea and green oolong tea, pour boiling water directly over tea.
  • For black, green and Pu-erh teas, water should be slightly cooler: wait 15 to 30 sec. before pouring, OR pour into a beaker/serving cup before transferring to teapot.
  • Infuse tea in teapot for 5-10 seconds only. 
  • Pour into a serving cup or beaker or directly into drinking cup
  • Enjoy!
  • Infusion can be repeated until the flavor is undesirable (4-10 times, depending on tea quality).
